  • 1 small garlic clove, minced
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1 teaspoon honey

Instructions

  1. Peel and cut 2 large sweet potatoes into 1/4-inch thick fries, keeping them evenly sized for even cooking (about 10 minutes).
  2. Place the cut fries in a large bowl of cold water and soak for at least 30 minutes (up to 2 hours) to remove excess starch.
  3. Drain the fries and pat completely dry with a clean kitchen towel or paper towels.
  4. In a dry bowl, toss the fries with 1 1/2 tablespoons olive oil, 1 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 3/4 teaspoon salt, and 1/4 teaspoon freshly ground black pepper until lightly coated.
  5. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  6. Arrange fries in a single layer in the air fryer basket without overcrowding. Air fry for 12-15 minutes, shaking the basket every 5 minutes for even crisping, until golden and crisp outside but tender inside.
  7. While fries cook, whisk together 1/2 cup mayonnaise, 1-2 finely chopped chipotle peppers in adobo sauce, 1 tablespoon lime juice, 1 minced garlic clove, 1/4 teaspoon smoked paprika, 1/4 teaspoon salt, and 1 teaspoon honey. Adjust chipotle or lime juice to taste.
  8. Serve fries hot with a generous dollop of smoky chipotle aioli on the side for dipping.

Notes

Soaking the fries in cold water is essential to remove starch and achieve crispiness. Dry fries thoroughly before air frying to avoid sogginess. Avoid overcrowding the air fryer basket to ensure even cooking. The aioli can be made ahead and refrigerated to deepen flavor. For vegan option, substitute mayonnaise with vegan mayo or mashed avocado. Oven baking at 425°F for 25-30 minutes is an alternative if no air fryer is available.
