  • 810 thin slices prosciutto
  • 1 tablespoon olive oil
  • Pinch of salt
  • Pinch of pepper
  • 1/4 cup (60 ml) balsamic vinegar
  • 1 tablespoon honey or brown sugar
  • 1/4 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Trim the woody ends off about 1 pound (450 g) of asparagus. Rinse and pat dry thoroughly.
  3. Lightly toss asparagus with 1 tablespoon olive oil and season with a pinch of salt and pepper.
  4. Take one slice of prosciutto and lay it flat. Place 3-4 asparagus stalks at one end and roll tightly, wrapping the prosciutto around the asparagus. Repeat for all asparagus.
  5. Place the bundles seam-side down on the baking sheet.
  6. Bake for 12-15 minutes until the prosciutto is crispy and asparagus is tender but bright green.
  7. While baking, combine balsamic vinegar, honey (or brown sugar), and garlic powder in a small saucepan over medium heat. Bring to a gentle boil, then simmer until thickened (5-7 minutes). Remove from heat and let cool slightly.
  8. Drizzle the warm balsamic glaze over the bundles before serving.

Do not overcrowd the baking sheet to ensure even crisping. Dry asparagus thoroughly to avoid sogginess. Use thin prosciutto slices for best crispiness. Simmer balsamic glaze gently to avoid bitterness. For extra crispiness, broil for 1-2 minutes after baking but watch carefully to avoid burning. Let glaze cool slightly before drizzling to thicken.
