Crispy Bacon and Chive Deviled Eggs

A quick and easy appetizer featuring hard-boiled eggs filled with a creamy yolk mixture, topped with crispy bacon and fresh chives for a perfect balance of comfort and crunch.

Ingredients

  • 12 large eggs, hard-boiled and peeled
  • 1/2 cup mayonnaise (preferably Hellmann’s)
  • 1 tablespoon Dijon mustard
  • 1 teaspoon white vinegar
  • Salt and freshly ground black pepper, to taste
  • 68 thick-cut bacon strips, cooked until crispy and crumbled
  • Fresh chives, finely chopped
  • Smoked paprika, for dusting (optional)

Instructions

  1. Place 12 large eggs in a single layer in a pot and cover with cold water by about an inch. Bring to a boil over medium-high heat, then cover, turn off the heat, and let them sit for 12 minutes.
  2. Drain the hot water and immediately transfer eggs to a bowl of ice water. Let chill for at least 5 minutes to stop cooking and make peeling easier. Peel eggs under running water if desired.
  3. While eggs cool, cook 6-8 thick-cut bacon strips in a skillet over medium heat until crisp, about 7-9 minutes, turning as needed. Transfer to paper towels to drain and crumble once cool.
  4. Slice eggs in half lengthwise and carefully remove yolks into a medium bowl. Mash yolks with a fork until smooth.
  5. Add 1/2 cup mayonnaise, 1 tablespoon Dijon mustard, 1 teaspoon white vinegar, salt, and pepper to taste to the yolks. Mix until creamy and well blended. Stir in half the chopped chives.
  6. Spoon or pipe the yolk mixture back into the egg white halves generously.
  7. Sprinkle crumbled crispy bacon over each egg, then scatter the remaining fresh chives on top. Dust lightly with smoked paprika if using.
  8. Refrigerate for at least 15 minutes before serving to let flavors meld and filling set slightly.

Notes

Older eggs peel easier. Cook bacon over medium heat without crowding the pan for maximum crispiness. Add bacon topping just before serving to keep it crunchy. Piping the filling creates a prettier presentation but spooning works fine. Adjust salt carefully as bacon adds saltiness. Can substitute half mayo with Greek yogurt for a lighter filling. Use green onions if chives are unavailable.
