These crispy bacon-wrapped jalapeño poppers feature a creamy cheese filling with sharp cheddar and cream cheese, wrapped in thin-cut bacon for a perfect spicy, crunchy snack. Quick and easy to make, they are perfect for gatherings, game days, or a savory indulgence.

  • 8 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika (optional)
  • 12 slices thin-cut bacon
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Wearing gloves, slice each jalapeño in half lengthwise. Use a spoon to carefully scoop out the seeds and membranes to reduce the heat.
  3. In a mixing bowl, combine softened cream cheese, shredded sharp cheddar, garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Mix until smooth and evenly blended.
  4. Generously fill each jalapeño half with the cheese mixture.
  5. Cut each slice of bacon in half crosswise. Wrap each stuffed jalapeño half with a bacon piece, securing the ends underneath if needed.
  6. Place the bacon-wrapped poppers seam side down on the prepared baking sheet.
  7. Bake for 20-25 minutes, or until the bacon is crispy and browned. For extra crispiness, broil for the last 2-3 minutes, watching closely to avoid burning.
  8. Let the poppers rest for 5 minutes before serving.

Notes

Wear gloves when handling jalapeños to avoid irritation. Use thin-cut bacon for best crispiness. If using thick-cut bacon, add 5 extra minutes to baking time. Let poppers rest after baking to allow filling to thicken. Broil carefully to avoid burning bacon. Poppers can be frozen uncooked and baked from frozen with additional cook time.
