  • 1/2 cup buffalo wing sauce
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • Optional: 1/2 cup shredded mozzarella cheese
  • 12 small flour tortillas (6-inch)
  • 2 tbsp melted butter or olive oil
  • Ranch dressing, for dipping
  • Blue cheese dressing, for dipping
  • Celery sticks, for serving (optional)

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, combine shredded chicken, buffalo wing sauce, cream cheese, cheddar cheese, green onions, garlic powder, and black pepper. Mix until smooth and evenly coated.
  3. Stack tortillas and cover with a damp paper towel. Microwave for 20-30 seconds until soft and pliable.
  4. Spoon about 2 tbsp of chicken mixture onto each tortilla, spreading in a line down the center. Roll up tightly and place seam side down on the baking sheet.
  5. Brush each taquito with melted butter or olive oil. For extra crispiness, lightly spray with cooking spray if desired.
  6. Bake for 15-18 minutes, or until tortillas are golden and crisp.
  7. Let taquitos cool for 2-3 minutes on a wire rack. Serve with ranch or blue cheese dressing and celery sticks.

Notes

For gluten-free, use corn tortillas. For vegetarian, substitute chicken with jackfruit or mushrooms. For dairy-free, use plant-based cream cheese and cheese shreds. Don’t overfill taquitos to avoid leaks. Unbaked taquitos freeze well; bake straight from frozen, adding 5 minutes to cook time. Air fryer option: cook at 400°F for 10-12 minutes.
