  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 3 tablespoons honey (raw honey preferred)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika (optional)
  • Salt to taste
  • Black pepper to taste
  • Fresh thyme or parsley, chopped (optional, for garnish)

Instructions

  1. Pat dry 4 boneless, skinless chicken breasts with paper towels to help crisp the surface. Set aside.
  2. In a mixing bowl, whisk together 3 tablespoons honey, 2 tablespoons Dijon mustard, 2 tablespoons olive oil, 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon paprika (optional), salt, and pepper to taste until smooth and glossy.
  3. Add the chicken breasts to the bowl and turn to coat evenly. Let them sit for at least 10 minutes at room temperature or marinate in the fridge for up to 1 hour for deeper flavor.
  4. Heat a heavy skillet (cast iron preferred) over medium heat for about 3 minutes. Add a little olive oil if needed to coat the bottom.
  5. Place the chicken breasts in the hot pan, flat side down, leaving space between each piece. Cook undisturbed for about 6-7 minutes until edges turn golden and crispy.
  6. Flip the chicken using tongs. Reduce heat to medium-low and cook for another 5-6 minutes with the pan covered loosely with a lid, or until an instant-read thermometer reads 165°F (74°C).
  7. Remove the chicken from the pan and let rest for 5 minutes before slicing to lock in juices.
  8. Sprinkle with fresh thyme or chopped parsley for garnish and serve.

Notes

Pat chicken dry before marinating to ensure crispiness. Do not move chicken around in the pan to allow a crust to form. Use medium to medium-high heat to avoid burning. Cover pan loosely during the last part of cooking to keep chicken juicy. Rest chicken before slicing. For oven-baked variation, bake at 425°F (220°C) for 20-25 minutes flipping halfway.
