  • 8 to 10 slices prosciutto (about 3 ounces), thinly sliced
  • 1 tablespoon extra virgin olive oil
  • Freshly cracked black pepper, to taste
  • Lemon zest (optional)
  • Parmesan cheese, finely grated (optional)

Instructions

  1. Rinse and pat dry about 1 pound (450 grams) of asparagus. Snap or trim off the woody ends (about 1 to 2 inches).
  2. Cut the asparagus into 3-inch pieces.
  3. Cut each slice of prosciutto in half lengthwise to create thin strips.
  4. Wrap each asparagus piece with a prosciutto strip, overlapping slightly and leaving the tip exposed.
  5. Arrange the wrapped asparagus bites seam side down on a parchment-lined baking sheet.
  6. Drizzle with 1 tablespoon olive oil and sprinkle with freshly cracked black pepper.
  7. Bake in a preheated oven at 400°F (200°C) for 10-12 minutes until prosciutto is crisp and asparagus is tender but still slightly crunchy.
  8. Remove from oven and optionally zest half a lemon over the bites and sprinkle with Parmesan cheese while warm.
  9. Let cool a few minutes before serving to allow bites to crisp up further.

Dry asparagus thoroughly before wrapping to avoid soggy prosciutto. Do not overcrowd the baking sheet to ensure even crisping. Rotate pan halfway through baking if prosciutto thickness varies.
