This Crispy Reuben Bake combines the comforting flavors of a classic Reuben sandwich in an easy-to-make casserole format, perfect for gatherings or a quiet night in.

Ingredients

Scale
  • 4 cups rye bread, cubed
  • 1 pound sliced corned beef, chopped
  • 1 cup sauerkraut, drained
  • 2 cups shredded Swiss cheese
  • 1/2 cup Thousand Island dressing
  • 1/3 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 2 cups rye bread, cubed
  • 2 tablespoons melted butter
  • 1 teaspoon garlic powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine 4 cups of cubed rye bread, corned beef, sauerkraut, and shredded Swiss cheese. Toss gently to mix and transfer to a greased 9×13-inch baking dish.
  3. In a small bowl, whisk together the Thousand Island dressing, mayonnaise, and Dijon mustard. Pour evenly over the bread mixture and use a spatula to spread it out if needed.
  4. In another bowl, toss 2 cups of cubed rye bread with melted butter and garlic powder until evenly coated. Sprinkle this mixture over the casserole.
  5. Place the dish in the preheated oven and bake for 25-30 minutes or until the bread topping is golden brown and crispy.
  6. Let the bake cool for about 5 minutes before serving.

Notes

Use fresh rye bread for the best texture, drain sauerkraut thoroughly to avoid sogginess, and let the bake cool slightly before serving for cleaner slices.
