  • 4 cups mini marshmallows (about 10 ounces)
  • 6 cups Rice Krispies cereal
  • 1/4 cup rainbow sprinkles
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Line a 9×13-inch baking pan with parchment paper or lightly grease it with butter.
  2. In a large saucepan over low heat, melt 3 tablespoons of unsalted butter until fully liquid but not browned.
  3. Slowly add 4 cups of mini marshmallows to the melted butter, stirring constantly until melted into a shiny, sticky mixture.
  4. Remove the pan from heat and stir in 1 teaspoon of vanilla extract.
  5. Immediately add 6 cups of Rice Krispies cereal to the marshmallow mixture and gently fold until evenly coated.
  6. Pour the mixture into the prepared pan and press evenly using a buttered spatula or hands.
  7. Sprinkle 1/4 cup of rainbow sprinkles evenly over the top and gently press them into the surface.
  8. Let the treats cool at room temperature for at least 30 minutes until firm, or refrigerate for 15-20 minutes for quicker setting.
  9. Cut into squares or desired shapes and serve.

Notes
