  • 2 medium zucchini, sliced into thick half-moons
  • 1 red bell pepper, cut into bite-sized pieces
  • 1 yellow bell pepper, cut into bite-sized pieces
  • 1 medium red onion, cut into wedges
  • 12 Brussels sprouts, halved
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt (coarse flakes)
  • 1/2 teaspoon freshly ground black pepper
  • Optional: pinch of smoked paprika

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry all vegetables thoroughly. Prepare carrots, zucchini, bell peppers, onion, and Brussels sprouts as described.
  3. Finely chop rosemary and thyme leaves. Set parsley aside for garnish.
  4. In a large mixing bowl, combine the vegetables with olive oil, chopped rosemary, thyme, sea salt, black pepper, and smoked paprika if using. Toss well to coat evenly.
  5. Spread the vegetables in a single layer on a rimmed baking sheet. Avoid overcrowding; use two pans if necessary.
  6. Roast in the oven for 25-30 minutes, flipping and shaking the vegetables halfway through to ensure even browning.
  7. Remove from oven and sprinkle fresh parsley over the top.
  8. Serve warm.
