A quick and easy sheet pan dinner featuring crispy skin chicken thighs and roasted baby red potatoes coated in a tangy-sweet honey mustard glaze. Perfect for busy weeknights and family dinners.

  • 6 bone-in, skin-on chicken thighs
  • 1.5 pounds baby red potatoes, washed and halved
  • 3 tablespoons honey
  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole grain mustard
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 23 sprigs fresh rosemary or thyme
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Optional: ½ teaspoon smoked paprika
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, whisk together honey, Dijon mustard, whole grain mustard, olive oil, minced garlic, salt, black pepper, and smoked paprika if using.
  3. Pat dry the chicken thighs with paper towels and season both sides with salt and pepper.
  4. Add the halved baby red potatoes to the bowl with the glaze and toss to coat evenly.
  5. Arrange the chicken thighs skin-side up on a rimmed sheet pan, spaced out evenly.
  6. Nestle the coated potatoes around the chicken in a single layer.
  7. Scatter fresh rosemary or thyme sprigs over the chicken and potatoes.
  8. Roast in the oven for 35-40 minutes. Halfway through cooking, flip the potatoes once and baste the chicken lightly with pan juices. Do not flip the chicken.
  9. Check that the chicken reaches an internal temperature of 165°F (74°C) and that the skin is golden and crisp, and potatoes are tender with browned edges.
  10. Remove from oven and let the chicken rest for 5 minutes before serving.
  11. Optional: If chicken skin is not crispy enough, broil for 2-3 minutes watching closely to avoid burning.

Notes

Pat chicken skin dry before seasoning to ensure crispiness. Use a rimmed sheet pan to catch drippings. Toss potatoes evenly and flip halfway through cooking for even browning. Rest chicken after cooking to lock in juices. Broil briefly if skin needs extra crisping. Line pan with parchment or foil for easier cleanup and to prevent sticking.
