  • 1 pound ground beef (80/20 blend recommended)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 1 cup shredded sharp cheddar cheese (about 4 ounces)
  • 4 small flour tortillas (6-inch)
  • Cooking oil (vegetable or canola) for frying
  • Optional toppings: shredded lettuce, diced tomatoes, pickles, sliced jalapeños
  • Sauce options: ketchup, mustard, chipotle mayo

Instructions

  1. In a medium bowl, gently combine ground beef with salt, black pepper, onion powder, and garlic powder. Avoid overmixing.
  2. Divide the beef into 4 equal portions and loosely shape each into a ball without compacting.
  3. Heat a cast iron skillet over medium-high heat until very hot, about 3-5 minutes.
  4. To make cheesy shells, place about ¼ cup (25g) shredded cheddar in a circle roughly the size of a tortilla. Let melt and bubble until golden and crispy around edges, about 2-3 minutes.
  5. Carefully place a tortilla on top of the melted cheese and press lightly to adhere. Flip and cook the other side for 1 minute. Remove and drain on paper towels.
  6. Place each beef ball in the hot skillet and immediately smash down firmly with a spatula or burger press until about ¼-inch thick.
  7. Cook patties for 2-3 minutes until edges are dark brown and crispy. Flip and cook another 1-2 minutes for medium doneness.
  8. Assemble tacos by placing each patty inside a cheesy shell. Add desired toppings and sauce.
  9. Serve immediately while shells are crispy and patties are hot.

Notes

Use freshly shredded cheese for best crispiness. Keep skillet hot but avoid burning cheese. Cook patties in batches if needed. For longer crispiness, cool shells on a wire rack. Corn tortillas can be used for gluten-free option but handle gently.
