  • 4 cloves fresh garlic, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon rice vinegar
  • 1/4 cup water or chicken broth
  • Chili flakes or Sriracha (optional)
  • 2 tablespoons toasted sesame seeds
  • Chopped green onions for garnish

Instructions

  1. Pat the chicken pieces dry with paper towels. Toss the chicken with about 3 tablespoons (24 g) cornstarch or flour until evenly coated. Set aside.
  2. Bring a large pot of salted water to a boil. Add 8 ounces (225 g) of egg noodles and cook according to package instructions (usually 3-4 minutes). Drain and toss with 1 teaspoon (5 ml) sesame oil to keep them from sticking. Set aside.
  3. Heat a small dry skillet over medium heat. Add 2 tablespoons (18 g) sesame seeds and toast, stirring frequently, for 2-3 minutes until golden and fragrant. Remove from heat and set aside.
  4. Heat 2 tablespoons (30 ml) vegetable oil in a large skillet over medium-high heat. Add chicken pieces in a single layer (in batches if needed). Fry for about 3-4 minutes per side until golden and crispy. Remove and drain on paper towels.
  5. In the same skillet, reduce heat to medium. Add 1 tablespoon (15 ml) vegetable oil if needed. Sauté 4 cloves minced garlic until fragrant (about 30 seconds). Add 3 tablespoons (45 ml) soy sauce, 1 tablespoon (15 ml) honey or brown sugar, 1 teaspoon (5 ml) rice vinegar, 1/4 cup (60 ml) water or chicken broth, and chili flakes if using. Stir and simmer for 2 minutes until slightly thickened.
  6. Return the crispy chicken to the skillet and stir to coat in the sticky garlic sauce. Add the cooked noodles and toss gently to combine, making sure noodles are evenly coated and heated through (about 2-3 minutes).
  7. Sprinkle toasted sesame seeds and chopped green onions over the top. Give it one last gentle toss and serve immediately.

Notes

Do not overcrowd the pan when frying chicken to maintain crispiness. Toast sesame seeds fresh to maximize aroma and crunch. Adjust sauce thickness with water or broth if it becomes too thick. Reheat leftovers gently in a skillet to keep chicken crispy; avoid microwaving.
