A festive appetizer combining savory turkey, tangy cranberry sauce, and creamy brie cheese wrapped in a crispy shell. Perfect for holiday gatherings or using up Thanksgiving leftovers.

  • 1 cup cooked turkey, shredded or diced
  • 1/2 cup cranberry sauce
  • 4 ounces brie cheese, sliced
  • 8 egg roll wrappers
  • 1 egg, whisked with 1 tablespoon water (egg wash)
  • 2 cups cooking oil (vegetable or canola)
  • Optional garnishes: fresh parsley or powdered sugar

Instructions

  1. In a bowl, mix the shredded turkey with cranberry sauce until evenly combined.
  2. Slice the brie cheese into small rectangles.
  3. Lay out the egg roll wrappers on a clean surface and keep a small bowl of egg wash nearby.
  4. Place about 2 tablespoons of the turkey-cranberry mixture in the center of each wrapper, then top with a slice of brie.
  5. Fold the bottom corner of the wrapper over the filling, tuck in the sides, and roll tightly. Seal the edges with egg wash.
  6. Heat about 2 inches of oil in a skillet to 350°F (175°C).
  7. Carefully place the egg rolls in the hot oil and fry for 2-3 minutes per side, until golden brown and crispy.
  8. Remove the egg rolls with tongs and place them on a plate lined with paper towels to drain excess oil.
  9. Garnish with parsley or powdered sugar, if desired, and serve warm.

Notes

For a healthier option, bake the egg rolls at 400°F (200°C) for 15-20 minutes, flipping halfway through. Use leftover filling as a topping for crackers or sandwiches.
