  • 4 cups russet potatoes, peeled and diced
  • 4 cups chicken broth
  • 8 ounces cream cheese, softened
  • 2 cups shredded cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • 1 packet ranch seasoning mix
  • 1 cup milk
  • 1/4 cup green onions, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a large skillet over medium heat until crispy. Drain on paper towels, crumble, and set aside.
  2. Peel and dice the russet potatoes into bite-sized cubes.
  3. In the crock pot, add the diced potatoes, chicken broth, and ranch seasoning mix. Stir to combine.
  4. Set the crock pot to low and cook for 6-7 hours, or until the potatoes are tender.
  5. Once the potatoes are cooked, stir in the cream cheese until fully melted and smooth.
  6. Add the shredded cheddar cheese and stir until melted and combined.
  7. Gradually add the milk to reach your desired thickness. Stir well to combine.
  8. Taste and adjust with salt and pepper as needed. Serve topped with crumbled bacon, chopped green onions, and extra shredded cheese.

Notes

For a smoother cream cheese blend, microwave it for 20 seconds before adding to the crock pot. Customize toppings with sour cream, extra cheese, or crushed crackers.
