  • 34 pound chuck roast
  • 4 cups low-sodium beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 large onion, sliced thinly
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 6 hoagie rolls
  • 6 slices provolone cheese

Instructions

  1. Season the chuck roast generously with salt and pepper on all sides.
  2. Place the sliced onion and minced garlic in the bottom of the crock pot. Lay the seasoned beef roast on top.
  3. Pour in the beef broth and Worcestershire sauce. Sprinkle the dried thyme and oregano over the top.
  4. Cover and cook on low for 8-10 hours or high for 4-6 hours, until the beef is tender and easily shreds with a fork.
  5. Use tongs to remove the beef from the crock pot and shred it into bite-sized pieces. Return it to the crock pot to soak up the juices.
  6. Preheat your oven to 375°F (190°C). Slice the hoagie rolls and arrange them on a baking sheet. Add shredded beef to each roll and top with provolone cheese.
  7. Bake for 5-7 minutes, or until the cheese is melted and bubbly.
  8. Strain the remaining liquid in the crock pot and serve it in small bowls as the dipping sauce.
