  • 23 boneless, skinless chicken breasts
  • 2 cups broccoli florets (fresh or frozen)
  • 2 cups sharp cheddar cheese, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon cornstarch (optional)

Instructions

  1. Place the chicken breasts in the bottom of your crockpot. Season them with salt, pepper, onion powder, and garlic powder.
  2. In a mixing bowl, whisk together the cream of chicken soup and milk until smooth. Pour this mixture over the chicken.
  3. Add the broccoli florets on top of the chicken and soup mixture. If using frozen broccoli, no need to thaw—just toss it in.
  4. Set your crockpot to cook on low for 6-7 hours or high for 3-4 hours. The chicken should be tender and cooked through.
  5. About 30 minutes before the cooking time is up, shred the chicken using two forks. Stir it back into the sauce to combine.
  6. Add the shredded cheddar cheese and stir until melted and creamy. If the sauce is too thin, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it in to thicken.
  7. Let the dish cook for an additional 10-15 minutes to allow the flavors to meld together. Serve hot and enjoy!
