  • 16 oz frozen or fresh cheese tortellini
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 4 oz cream cheese, softened
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning. Set aside.
  2. In a mixing bowl, whisk together softened cream cheese, heavy cream, chicken broth, garlic, and a sprinkle of Italian seasoning until smooth.
  3. Place the seasoned chicken breasts at the bottom of the crockpot, then pour the sauce mixture over the chicken.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the chicken is tender and fully cooked (internal temperature should reach 165°F/74°C).
  5. Stir in the cheese tortellini and grated Parmesan cheese. Cover and cook for an additional 30 minutes on low. Check the tortellini for doneness—it should be tender but not mushy.
  6. Use two forks to shred the cooked chicken into bite-sized pieces. Stir everything together to coat the pasta and chicken in the sauce.
  7. Garnish with extra Parmesan, freshly chopped parsley, or a sprinkle of red pepper flakes for added flavor. Serve warm and enjoy!
