Ingredients

  • Boneless, skinless chicken breasts or thighs
  • Low-sodium chicken broth
  • Cream of chicken soup
  • Carrots, peeled and diced
  • Celery, chopped
  • Onion, diced
  • Garlic, minced
  • Salt and pepper to taste
  • Dried thyme
  • Dried parsley
  • Biscuit dough (store-bought or homemade)

Instructions

  1. Dice the carrots, celery, and onion, and mince the garlic. Set aside.
  2. Place the chicken breasts or thighs into the crockpot. Sprinkle with salt, pepper, dried thyme, and parsley.
  3. Add the diced carrots, celery, onion, and garlic on top of the chicken.
  4. Pour the chicken broth and cream of chicken soup into the crockpot. Stir gently to combine.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is tender.
  6. Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the crockpot.
  7. Prepare biscuit dough. If using store-bought dough, cut it into small pieces. For homemade, mix flour, baking powder, salt, and milk until a soft dough forms.
  8. Drop the biscuit dough pieces into the crockpot, covering the surface of the broth. Avoid overcrowding.
  9. Cover and cook on high for an additional 30 minutes until the dumplings are cooked through and fluffy.
  10. Stir gently to combine the dumplings with the chicken and broth. Serve warm, garnished with fresh parsley if desired.
