  • 23 pounds boneless, skinless chicken breasts or thighs
  • 2 cups low-sodium chicken broth
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 packet dry onion soup mix
  • 1 teaspoon garlic powder (optional)
  • Salt and pepper to taste
  • Optional fresh parsley for garnish

Instructions

  1. In a mixing bowl, combine the cream of chicken soup, chicken broth, dry onion soup mix, garlic powder, salt, and pepper. Whisk until smooth.
  2. Place the chicken breasts or thighs into the crockpot. Pour the gravy mixture over the chicken, ensuring it’s evenly coated.
  3. Set your crockpot to low and cook for 6-8 hours, or on high for 3-4 hours. The chicken should be fork-tender when done.
  4. Once cooked, shred the chicken directly in the crockpot using two forks, or leave it whole if preferred.
  5. If the gravy seems too thin, remove the chicken and whisk in a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water). Let it cook for another 15-20 minutes to thicken.
  6. Serve the chicken and gravy hot over mashed potatoes, rice, or noodles. Garnish with freshly chopped parsley if desired.

Notes

For a thicker gravy, use a cornstarch slurry or add heavy cream toward the end. Leftovers reheat beautifully and flavors deepen overnight.
