  • 23 pounds boneless, skinless chicken breasts (or thighs)
  • 1 cup chicken broth
  • 3 cloves garlic, minced
  • 1 medium onion, finely diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • 1 tablespoon lemon juice

Instructions

  1. Mince the garlic and dice the onion. Set them aside.
  2. Rub the chicken breasts with olive oil, then sprinkle on paprika, oregano, salt, and pepper until evenly coated.
  3. Place the diced onion and minced garlic at the bottom of the Crockpot to create a flavorful base.
  4. Lay the seasoned chicken breasts over the onion and garlic.
  5. Pour the chicken broth over the top, followed by the lemon juice.
  6. Cover the Crockpot and cook on low for 6-7 hours, or on high for 3-4 hours. The chicken is done when it’s tender and reaches an internal temperature of 165°F (74°C).
  7. For pulled chicken, use two forks to shred the meat directly in the Crockpot.
