  • 2 boneless, skinless chicken breasts
  • 16 ounces refrigerated cheese-filled tortellini
  • 2 cups low-sodium chicken broth
  • 8 ounces cream cheese, softened and cubed
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup freshly grated Parmesan cheese
  • Optional: Fresh spinach or sun-dried tomatoes

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning. Place them in the CrockPot.
  2. Pour in the chicken broth and add the minced garlic. Cover and cook on low for 6 hours or high for 3 hours.
  3. Once the chicken is tender, remove it from the CrockPot and shred it using two forks. Return the shredded chicken to the pot.
  4. Add the cubed cream cheese and heavy cream. Stir until the cream cheese melts and combines into the sauce.
  5. Add the tortellini directly to the CrockPot. Cover and cook on low for an additional 30 minutes, or until the tortellini is tender.
  6. Stir in the Parmesan cheese and adjust seasoning with more salt and pepper if needed.
