  • 2 lbs boneless, skinless chicken breasts
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons all-purpose flour (or gluten-free 1:1 blend or cornstarch)
  • 34 garlic cloves, minced
  • 1 cup chicken broth (low-sodium recommended)
  • 1 cup heavy cream (or half-and-half for lighter sauce)
  • 3/4 cup grated parmesan cheese (freshly grated preferred)
  • 1/2 cup sun-dried tomatoes, drained and chopped (oil-packed, excess oil blotted)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Fresh basil or parsley, chopped (for garnish, optional)

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides with salt and black pepper.
  2. In a medium bowl, whisk together chicken broth, heavy cream, grated parmesan, flour, minced garlic, Italian seasoning, and red pepper flakes (if using) until smooth.
  3. Place seasoned chicken breasts in the bottom of the slow cooker. Scatter chopped sun-dried tomatoes over the chicken.
  4. Pour the sauce mixture evenly over the chicken and tomatoes.
  5. Cover and cook on low for 4-5 hours or high for 2–2.5 hours, until the chicken is cooked through and tender (internal temperature should reach 165°F).
  6. If the sauce is thinner than desired, mix 1 tablespoon flour or cornstarch with 2 tablespoons cold water, stir into the sauce, and cook uncovered for 15-20 more minutes on high to thicken.
  7. Taste the sauce and adjust salt or pepper if needed. Garnish with chopped fresh basil or parsley before serving.
  8. Serve chicken whole, sliced, or shredded with plenty of sauce spooned over the top.

Notes

For extra flavor, you can brown the chicken in a skillet for 2 minutes per side before adding to the crockpot, but it’s optional. Use freshly grated parmesan for the smoothest sauce. To make gluten-free, use cornstarch or a GF flour blend. The sauce thickens as it cools; if reheating, add a splash of cream or broth. Chicken thighs can be substituted for extra juiciness. Add spinach or kale in the last hour for extra veggies.
