These delicate honey lavender shortbread cookies offer a buttery, tender crumb with subtle floral notes and a touch of honey sweetness, perfect for elegant snacking and special moments.

Ingredients

Scale
  • 1 cup (227g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • ¼ cup (85g) honey (mild, floral like wildflower or clover)
  • 2 cups (250g) all-purpose flour, sifted
  • 1 tablespoon dry culinary lavender buds, crushed
  • ½ teaspoon fine sea salt
  • 1 teaspoon vanilla extract
  • Optional: powdered sugar for dusting
  • Optional: replace ¼ cup (30g) all-purpose flour with almond flour for nuttier flavor and gluten-sensitive option

Instructions

  1. Lightly crush the lavender buds between your fingers or in a mortar and pestle to release aroma. Set aside. (5 minutes)
  2. In a large bowl, beat 1 cup softened unsalted butter with ½ cup granulated sugar using a hand mixer on medium speed until light and fluffy, about 3-4 minutes.
  3. Pour in ¼ cup honey and 1 teaspoon vanilla extract. Beat until fully incorporated and smooth, scraping down the sides as needed. (1–2 minutes)
  4. Stir in the crushed lavender buds and ½ teaspoon fine sea salt to the wet mixture. Ensure lavender is evenly dispersed. (1 minute)
  5. In a separate bowl, sift together 2 cups all-purpose flour. If using almond flour, add ¼ cup here and reduce all-purpose flour accordingly. (2 minutes)
  6. Gradually add the flour mixture to the wet ingredients, mixing on low speed or folding by hand just until the dough comes together. Avoid overmixing. The dough will be soft but not sticky. (2–3 minutes)
  7. Shape the dough into a flat disk, wrap in plastic wrap, and refrigerate for at least 30 minutes to firm up and prevent spreading during baking.
  8. Preheat oven to 325°F (163°C). Line a baking sheet with parchment paper or a silicone mat.
  9. On a lightly floured surface, roll the dough out to about ¼-inch (6 mm) thickness. Use cookie cutters or a knife to cut into desired shapes. Transfer cookies to the baking sheet, spacing about 1 inch (2.5 cm) apart. (10 minutes)
  10. Bake for 15–18 minutes until edges start to turn light golden but centers remain pale. Avoid overbaking to preserve delicate texture.
  11. Remove from oven and let cookies cool on the sheet for 5 minutes before transferring to a wire rack to cool completely. (10 minutes)
  12. Optional: Once cool, dust lightly with powdered sugar for an elegant finish.

Notes

Chill dough for at least 30 minutes to prevent spreading and maintain shape. Use good-quality unsalted butter at room temperature but not melted. Avoid overmixing flour to keep cookies tender. Start checking cookies at 14 minutes to avoid overbaking. If dough is too soft after chilling, refrigerate an additional 10 minutes before rolling. Sifting flour is key for extra-light texture. Culinary lavender is preferred over fresh to avoid overpowering flavor. Optional variations include gluten-free flour blends, vegan butter and maple syrup substitution, and adding nuts for crunch.
