Delicious Biscoff Blondies Recipe with Gooey Cookie Butter

  • 1 cup light brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup Biscoff cookie butter, warmed
  • 1/4 cup Biscoff cookies, crushed (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large mixing bowl, whisk together the melted butter, light brown sugar, and granulated sugar until smooth.
  3. Add the eggs and vanilla extract to the bowl. Whisk until fully incorporated and slightly thickened.
  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually fold the dry mixture into the wet ingredients using a spatula. Be careful not to overmix.
  5. Transfer half of the blondie batter to the prepared pan, spreading it evenly with a spatula.
  6. Warm the Biscoff cookie butter slightly in the microwave (about 15 seconds) to make it easier to drizzle. Swirl half of the cookie butter over the batter.
  7. Top with the remaining blondie batter, spreading it gently to cover the cookie butter layer.
  8. Drizzle the remaining cookie butter on top and use a knife or skewer to create swirls.
  9. Optional: Sprinkle crushed Biscoff cookies over the top for added crunch.
  10. Bake for 30-35 minutes or until the edges are golden and the center is just set. A toothpick inserted into the center should come out with moist crumbs.
  11. Let the blondies cool completely in the pan before lifting them out using the parchment paper overhang. Slice into squares and enjoy!
