  • 2 large eggs, at room temperature

  • 1 1/2 cups (190g) all-purpose flour

  • 1/2 teaspoon salt
  • 1 cup (170g) white chocolate chunks
  • 1 cup (120g) walnuts, toasted and roughly chopped

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9-inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Toast the walnuts by spreading them on a baking sheet and baking for 8-10 minutes until fragrant and slightly browned. Let cool completely.
  3. In a large bowl, whisk together melted unsalted butter and light brown sugar until smooth and glossy. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.
  4. In a separate bowl, sift together all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently with a spatula just until combined. Do not overmix.
  6. Fold in the toasted walnuts and white chocolate chunks carefully to evenly disperse them while keeping the batter airy.
  7. Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 25-30 minutes, or until edges are golden and a toothpick inserted near the center comes out with a few moist crumbs.
  8. Let the blondies cool completely in the pan on a wire rack for at least 30 minutes. Use the parchment overhang to lift them out and slice into squares.
