Delicious Cinnamon Roll Cheesecake Bars

A buttery cinnamon swirl layered over creamy cheesecake, baked into bars that are dangerously easy to devour. Perfect for sharing or savoring all by yourself!

  • 1 ½ cups graham cracker crumbs
  • 5 tbsp unsalted butter, melted
  • 2 tbsp granulated sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs, room temperature
  • 3 tbsp unsalted butter, softened
  • ⅓ cup brown sugar
  • 1 tbsp ground cinnamon
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 325°F (160°C). Line your baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined. Press the mixture firmly into the bottom of the pan to form an even layer. Bake for 8 minutes, then set aside to cool.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add vanilla extract and eggs one at a time, mixing until fully incorporated. Pour the filling over the cooled crust.
  4. Combine softened butter, brown sugar, cinnamon, flour, and vanilla in a small bowl until a thick paste forms.
  5. Drop spoonfuls of the cinnamon mixture onto the cheesecake layer. Use a knife or skewer to swirl it gently into the filling.
  6. Place the pan in the oven and bake for 35-40 minutes, or until the cheesecake is set but slightly jiggly in the center.
  7. Let the bars cool completely at room temperature, then refrigerate for at least 2 hours before slicing.
