Instructions

  1. Cube about 4 cups (roughly 120 grams) of day-old bread into 1-inch pieces.
  2. In a large bowl, whisk together 3 large eggs, 1 cup whole milk, 1/4 cup heavy cream, 2 tablespoons granulated sugar, 1 teaspoon vanilla extract, 1/2 teaspoon ground cinnamon, and a pinch of salt until smooth.
  3. Gently fold the cubed bread and 1 cup frozen blueberries into the custard mixture, ensuring the bread is evenly coated but not overly broken up. Let sit for about 10 minutes to soak (or refrigerate up to 1 hour for deeper flavor).
  4. Preheat oven to 350°F (175°C). Butter an 8×8-inch (20×20 cm) baking dish generously.
  5. Pour the soaked bread mixture into the prepared dish, spreading evenly. Bake for 35-40 minutes until the top is golden brown and custard is set.
  6. Let the bake rest for 5 minutes before serving. Optionally dust with powdered sugar or drizzle with maple syrup.
