  • 2 cups shredded chicken
  • 1 packet taco seasoning
  • 1 cup salsa
  • 1 cup corn kernels (fresh, frozen, or canned, drained)
  • 1 cup black beans (rinsed and drained)
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 2 cups crushed tortilla chips
  • 1/4 cup green onions (thinly sliced)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch casserole dish lightly with cooking spray.
  2. In a large mixing bowl, toss the shredded chicken with taco seasoning until evenly coated.
  3. Spread half the salsa on the bottom of the casserole dish. Add the seasoned chicken as the first layer, followed by corn, black beans, and sour cream. Sprinkle a generous layer of cheese on top.
  4. Crush the tortilla chips and sprinkle them evenly over the cheese layer. Top with the remaining salsa and another layer of shredded cheese.
  5. Cover the casserole lightly with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is fully melted and bubbly.
  6. Remove the casserole from the oven and let it cool for 5 minutes. Garnish with sliced green onions and serve warm.
