  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup sugar-free chocolate chips (130g)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, beat together 1/2 cup softened butter and 2 ounces softened cream cheese until smooth and fluffy, about 2-3 minutes.
  3. Mix in 3/4 cup erythritol and monk fruit blend until combined. Then add 1 large egg and 1 teaspoon vanilla extract. Beat until smooth and creamy.
  4. In a large bowl, whisk together 2 cups almond flour, 2 tablespoons coconut flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt.
  5. Gradually add the dry ingredients to the wet, stirring with a spatula until just combined. If dough is too sticky, add a tablespoon of extra almond flour.
  6. Fold in 3/4 cup sugar-free chocolate chips evenly throughout the dough.
  7. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing about 2 inches apart.
  8. Bake for 12-15 minutes until edges are set and lightly golden but centers remain soft.
  9. Let cookies cool on the baking sheet for 10 minutes before transferring to a wire rack to finish cooling.
