  • 3 cups day-old cooked rice (preferably jasmine or long grain)

  • 2 large eggs, beaten
  • 2 stalks green onions, thinly sliced
  • 2 tablespoons soy sauce (Kikkoman preferred)
  • 1 tablespoon oyster sauce (optional)
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Optional veggies: 1 cup peas, diced carrots, or bell peppers

Instructions

  1. Dice leftover pork into bite-sized pieces. If using fresh pork, cook thoroughly and let cool. Slice green onions and mince garlic. Dice optional veggies into small uniform pieces.
  2. Beat two large eggs in a mixing bowl until smooth and set aside.
  3. Heat 2 tablespoons vegetable oil in a large non-stick skillet or wok over medium-high heat until shimmering but not smoking (about 1-2 minutes).
  4. Pour in beaten eggs, swirling to create a thin layer. Cook undisturbed for about 30 seconds until just set, then scramble gently with a spatula. Remove eggs from pan and set aside.
  5. Add a little more oil if needed. Toss in minced garlic and cook for 30 seconds until fragrant but not browned.
  6. Stir-fry pork pieces and optional veggies for 2-3 minutes until heated through and slightly caramelized.
  7. Add cold cooked rice, breaking up clumps with spatula. Spread evenly and let sit without stirring for 2-3 minutes to develop a crispy bottom.
  8. Drizzle soy sauce and oyster sauce evenly over rice. Stir well to combine and coat all grains.
  9. Return scrambled eggs to pan along with sliced green onions. Toss together for another minute.
  10. Press rice down again and cook for another 1-2 minutes without stirring to get a final crispy layer.
  11. Taste and adjust salt and pepper if needed. Serve immediately while hot and crispy.

Notes

Use day-old cold rice to achieve the best crispy texture. Cook over medium-high heat and let rice sit undisturbed to form a crust. Add sauces gradually to avoid sogginess. Use a spatula with a flat edge to lift rice crisps gently. For gluten-free, substitute tamari for soy sauce. For vegetarian, omit pork and eggs and add extra veggies with vegetarian soy sauce.
