A hearty and comforting slow cooker meal featuring tender steak, soft potatoes, melted cheddar cheese, and crispy bacon. Perfect for busy weeknights and cozy dinners.

Ingredients

  • 1.5 pounds sirloin or ribeye steak, cut into 1-inch cubes
  • 4 medium red or Yukon gold potatoes, diced into bite-sized pieces
  • 6 slices thick-cut bacon, cooked and crumbled
  • 1.5 cups shredded sharp cheddar cheese
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup beef broth (240 ml)
  • 1/2 cup sour cream (120 ml)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme

Instructions

  1. Cut the steak into 1-inch cubes and season with salt, pepper, smoked paprika, and thyme in a mixing bowl.
  2. Dice the potatoes into bite-sized pieces, mince the garlic, and finely chop the onion.
  3. Cook the bacon in a skillet until crisp, then crumble and set aside.
  4. Spray the crockpot lightly with cooking spray to prevent sticking.
  5. Layer half the diced potatoes evenly on the bottom of the crockpot.
  6. Add half the chopped onion and garlic over the potatoes.
  7. Layer half the seasoned steak cubes on top.
  8. Pour half the beef broth over the layers, then dollop half the sour cream in spoonfuls across the steak and potatoes.
  9. Repeat the layers with the remaining potatoes, onions, steak, broth, and sour cream.
  10. Cover and cook on low for 4-5 hours or on high for 2-3 hours until the steak is tender and potatoes are soft but still hold shape.
  11. About 10 minutes before done, sprinkle shredded cheddar cheese evenly on top and scatter the crumbled bacon.
  12. Cover again and let cheese melt and bacon warm for about 10 minutes.
  13. Serve hot, optionally stirring gently to mix layers or scooping to preserve layering.

Notes

Use fresh or thawed steak and potatoes for best texture. Cut ingredients evenly to ensure uniform cooking. Pre-cook bacon to keep it crispy on top. Avoid lifting the lid frequently during cooking to maintain heat. Let the dish rest for 10 minutes after cooking to meld flavors. For a low-carb version, substitute potatoes with cauliflower or turnips and add them in the last 2 hours of cooking.
