Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
  2. Peel and cube the sweet potatoes into roughly 1-inch pieces. Toss them in a mixing bowl with 1 tablespoon olive oil, garlic powder, smoked paprika, salt, and pepper. Spread evenly on the baking sheet.
  3. Roast the sweet potatoes for 25-30 minutes, flipping halfway through, until tender with caramelized edges.
  4. While the potatoes roast, cut chicken breasts into bite-sized pieces. Heat 1 tablespoon olive oil in a large skillet over medium heat.
  5. Cook the chicken pieces for 6-8 minutes, stirring occasionally, until cooked through and lightly browned. Season with salt and pepper.
  6. Lower the heat and stir in the BBQ sauce. Toss the chicken until well coated and heated through, about 2-3 minutes.
  7. Optional: Sprinkle shredded cheese over the chicken, cover briefly to melt.
  8. Assemble the bowls by dividing roasted sweet potatoes between serving bowls, topping with BBQ chicken mixture, and garnishing with chopped parsley or cilantro and sliced red onion if using.

Do not overcrowd the pan or baking sheet to ensure proper caramelization and browning. Use a smoky, slightly spicy BBQ sauce for best flavor. Let chicken rest a minute after cooking for juiciness.
