  • 2 tablespoons honey (mild-flavored like clover or wildflower)
  • 1/3 cup (35g) toasted walnuts, roughly chopped
  • 1 sheet puff pastry (about 8x8 inches), thawed
  • 1 large egg, beaten (for egg wash)
  • Optional: fresh thyme or rosemary sprigs for garnish
  • Optional: pinch of cinnamon

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.
  2. Toast walnuts in a dry skillet over medium heat, stirring frequently for 3-5 minutes until fragrant and golden. Set aside to cool.
  3. On a lightly floured surface, roll out the thawed puff pastry sheet just enough to smooth creases (about 8×8 inches).
  4. Place the brie wheel in the center of the pastry. Drizzle honey over the top, then sprinkle the toasted walnuts evenly.
  5. Fold the pastry edges up and over the brie, pinching the dough to seal completely. Trim excess pastry if needed and tuck ends underneath to create a neat package.
  6. Brush the entire pastry-wrapped brie with beaten egg wash to create a shiny, golden crust.
  7. Transfer to the prepared baking sheet and bake for 20-25 minutes, or until pastry is puffed and golden brown.
  8. Let the baked brie rest for 5 minutes before serving to allow the cheese to set slightly.

Notes

Use room temperature brie for smooth melting. Toast walnuts carefully to avoid burning. If pastry browns too quickly, tent with foil halfway through baking. Let baked brie rest 5 minutes before serving to prevent cheese from leaking.
