  • 1 small red onion, cut into wedges
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • 1 tablespoon soy sauce (low sodium preferred)
  • 1 tablespoon olive oil
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon dried Italian herbs or oregano

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, whisk together honey, minced garlic, soy sauce, olive oil, apple cider vinegar, and optional red pepper flakes to prepare the honey garlic glaze. Set aside.
  3. Slice the smoked sausage into 1/2-inch rounds, keeping them uniform for even cooking.
  4. Prepare the vegetables: chop the red bell pepper into 1-inch pieces, slice the zucchini into 1/4-inch thick half-moons, halve the baby carrots lengthwise, and cut the red onion into wedges.
  5. In a large mixing bowl, combine the sausage and vegetables. Pour the honey garlic glaze over the mixture and sprinkle with dried Italian herbs, salt, and pepper. Toss everything until evenly coated.
  6. Spread the mixture out on a rimmed baking sheet in a single layer, leaving space between pieces to allow roasting rather than steaming.
  7. Place the baking sheet on the middle rack of the oven and roast for about 20 minutes. Halfway through, stir or flip the ingredients to promote even roasting.
  8. Optionally, brush on additional honey garlic glaze after stirring for a glossy, sticky finish.
  9. Continue roasting for another 10-15 minutes, or until the sausage edges are crisp and the vegetables are tender with some charred spots.
  10. Serve warm directly from the pan.

Notes

Do not overcrowd the pan to ensure veggies and sausage crisp up instead of steaming. Use high heat (425°F) for caramelization. Apply the glaze late in cooking to avoid burning. Fresh garlic is preferred for best flavor. Smaller veggie pieces may cook faster; monitor after 25 minutes. For gluten-free, use gluten-free sausage and substitute soy sauce with tamari or coconut aminos.
