  • 4 salmon fillets (6-ounce / 170g each), skin-on, wild-caught if possible
  • 4 tablespoons unsalted butter (about 57g), melted
  • 2 tablespoons fresh lemon juice (from 1 large lemon)
  • 2 tablespoons fresh dill, finely chopped (or 1 tablespoon dried dill)
  • 2 cloves garlic, minced (optional)
  • 1 teaspoon kosher salt or sea salt
  • ½ teaspoon freshly ground black pepper
  • Lemon zest from 1 lemon
  • 1 tablespoon olive oil, to lightly grease the baking dish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Lightly coat a medium-sized baking dish (about 9×9 inches) with olive oil to prevent sticking.
  3. In a mixing bowl, whisk together melted butter, fresh lemon juice, minced garlic, chopped dill, lemon zest, salt, and black pepper until well blended.
  4. Place the salmon fillets skin-side down in the prepared baking dish. Pat dry with paper towels if needed.
  5. Pour the lemon dill butter mixture evenly over the salmon, coating each fillet well. Use a basting brush or spoon if desired.
  6. Bake in the preheated oven for 12-15 minutes, depending on thickness, until the salmon flakes easily with a fork and is opaque pink inside.
  7. Optional: For a crisp edge, broil the salmon for the last 1-2 minutes, watching closely to avoid burning.
  8. Remove from oven and let the salmon rest for 2-3 minutes before serving.

Notes

Do not overcook the salmon to keep it moist; check for flakiness starting at 12 minutes. Use fresh lemon juice and dill for best flavor. Let salmon come to room temperature for 10 minutes before baking for even cooking. Leftover salmon can be stored in an airtight container in the refrigerator for up to 2 days and reheated gently in the oven at 300°F for about 10 minutes.
