  • 3 cloves garlic, minced

  • 1/4 cup (60 ml) water or beef broth
  • 1 tablespoon brown sugar or coconut sugar
  • 1 teaspoon sesame oil
  • 2 stalks green onions, sliced thin
  • Red pepper flakes (optional, a pinch)

Instructions

  1. Thinly slice half a medium green cabbage (about 4 cups shredded), mince 3 garlic cloves, and grate 1 tablespoon fresh ginger. Slice 2 green onions for garnish.
  2. Heat 1 tablespoon of vegetable or canola oil in a large skillet over medium-high heat. Add 1 pound ground beef and cook, breaking up with a spoon, until browned and cooked through, about 6-8 minutes. Drain excess fat if needed.
  3. Lower heat to medium, then stir in minced garlic and grated ginger. Cook for 1-2 minutes until fragrant but not burnt.
  4. In a small bowl, whisk together 1/4 cup soy sauce, 1/4 cup water or beef broth, and 1 tablespoon brown sugar. Pour this into the skillet.
  5. Add the shredded cabbage to the skillet and stir well to coat with sauce. Cover the pan with a lid and cook for 5-7 minutes, stirring halfway through, until cabbage is tender but still slightly crisp.
  6. Remove lid, stir in 1 teaspoon sesame oil, and season with red pepper flakes if using. Taste and adjust seasoning as needed.
  7. Sprinkle sliced green onions over the top and serve immediately.

Notes

Do not overcrowd the pan to ensure proper browning of beef. Use fresh ginger and garlic for best flavor. Cook cabbage until tender-crisp to avoid mushiness. Add sesame oil at the end for authentic aroma. For gluten-free, substitute soy sauce with tamari or coconut aminos. Ground turkey or chicken can be used as a substitute for beef.
