An easy and comforting overnight cinnamon roll casserole that combines canned cinnamon rolls with a custard soak for a gooey, tender breakfast treat. Perfect for busy mornings or cozy weekend brunches.

Ingredients

Scale
  • 1 package canned cinnamon rolls (usually 8 rolls, with icing included)
  • 4 large eggs, room temperature
  • 1 cup (240 ml) milk (whole or 2%)
  • ⅓ cup (65 g) brown sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 tbsp (28 g) melted butter
  • Pinch of salt
  • Optional toppings: chopped pecans or walnuts, raisins, fresh berries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9×13 inch baking dish with butter or nonstick spray.
  3. Open the canned cinnamon rolls and cut each roll into quarters.
  4. Spread the cinnamon roll pieces evenly across the bottom of the prepared baking dish.
  5. In a mixing bowl, whisk together 4 large eggs, 1 cup milk, ⅓ cup brown sugar, 1 tsp vanilla extract, 1 tsp ground cinnamon, 2 tbsp melted butter, and a pinch of salt until smooth and slightly frothy.
  6. Pour the custard mixture evenly over the cinnamon roll pieces and let soak for a few minutes.
  7. Optionally cover the dish with plastic wrap or foil and refrigerate overnight to maximize flavor and moisture.
  8. Bake uncovered for 30 to 35 minutes, until the custard is set and the top is golden brown; the center should no longer be jiggly.
  9. Drizzle the included cinnamon roll icing over the warm casserole. For extra sweetness, whisk the icing with a splash of milk to make a pourable glaze.
  10. Cut into squares and serve warm immediately.

Notes

Use room temperature eggs for a smoother custard. Cutting rolls into quarters helps even soaking and baking. If edges brown too fast, tent with foil halfway through baking. Overnight soaking improves texture but you can bake immediately if short on time. For gluten-free, use gluten-free cinnamon rolls. Optional add-ins include nuts, raisins, fresh berries, or spices like nutmeg and cardamom.
