  • 1/3 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your baking dish with butter or non-stick spray.
  2. In a mixing bowl, combine the raspberries, granulated sugar, cornstarch, and lemon juice. Toss gently until the raspberries are evenly coated. Pour the mixture into the prepared baking dish.
  3. In another bowl, stir together the oats, flour, brown sugar, and cinnamon (if using). Pour in the melted butter and mix until the topping resembles coarse crumbs.
  4. Sprinkle the oat mixture evenly over the raspberries, covering them as completely as possible.
  5. Bake for 35-40 minutes, or until the topping is golden brown and the raspberries are bubbling around the edges.
  6. Remove from the oven and let cool for 10 minutes before serving. The filling will thicken as it cools.
