A quick, wholesome, and flavorful meal combining nutty soba noodles with pan-seared salmon and a bright sesame ginger sauce. Perfect for busy weeknights and health-conscious eaters.

  • 8 ounces dried soba noodles
  • 2 salmon fillets (about 6 ounces each), skin-on
  • 2 tablespoons sesame oil
  • 1 tablespoon fresh ginger, finely grated
  • 2 cloves garlic, minced
  • 3 tablespoons low sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, thinly sliced
  • Pinch of red pepper flakes (optional)
  • Optional vegetables: thinly sliced bell peppers or snap peas

Instructions

  1. Bring a large pot of water to a boil. Add soba noodles and cook according to package instructions (usually 4-6 minutes). Stir occasionally to prevent sticking. Drain and rinse under cold water to stop cooking and remove excess starch. Set aside.
  2. In a small bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, grated ginger, and minced garlic until well combined. Adjust sweetness or acidity to taste.
  3. Heat a non-stick skillet over medium-high heat. Season salmon fillets lightly with salt and pepper. Add a teaspoon of sesame oil to the pan. Place salmon skin-side down and cook for 4-5 minutes without moving to get crispy skin. Flip and cook the other side for 3-4 minutes until cooked through but still moist inside.
  4. In a large bowl, combine cooled soba noodles and sesame ginger sauce. Toss gently to coat evenly. Add optional vegetables if using and toss again.
  5. Divide noodles between plates. Top each with a cooked salmon fillet. Garnish with green onions, toasted sesame seeds, and red pepper flakes if desired.

Notes

Rinse soba noodles under cold water after cooking to prevent overcooking and maintain chewy texture. Heat pan properly before adding salmon for crispy skin. Let salmon rest a few minutes after cooking to keep it juicy. If noodles seem dry after tossing, add a splash of warm water or extra sesame oil. Avoid overcrowding the pan when cooking salmon.
