  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/4 tsp smoked paprika (optional)
  • Salt and black pepper to taste
  • 1 tbsp olive oil
  • 8 oz (225 g) shredded cheese blend (sharp cheddar and Monterey Jack)
  • 1 bag (10-12 oz / 280-340 g) sturdy tortilla chips
  • 1 medium tomato, diced
  • 1 jalapeño, thinly sliced (seeds removed for less heat)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup sliced black olives (optional)
  • 1/2 cup sour cream or Greek yogurt
  • 1 avocado, diced or sliced (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add the chopped onion and sauté for 2-3 minutes until softened and translucent.
  3. Stir in the minced garlic and cook for another 30 seconds, avoiding burning.
  4. Add the ground beef to the skillet, breaking it up with a spatula. Cook for 5-7 minutes until fully browned and no longer pink.
  5. Sprinkle in chili powder, cumin, smoked paprika, salt, and pepper. Stir and cook for another minute to toast the spices.
  6. Drain excess fat from the beef if necessary.
  7. Spread a layer of tortilla chips evenly on a baking sheet or oven-safe dish.
  8. Spoon a generous amount of the seasoned beef over the chips.
  9. Sprinkle shredded cheese evenly over the beef and chips.
  10. Bake in the preheated oven for 8-10 minutes until cheese is melted, bubbly, and just starting to brown.
  11. Remove from oven and immediately sprinkle diced tomatoes, sliced jalapeños, olives, and cilantro on top.
  12. Dollop sour cream or Greek yogurt and add avocado slices if using. Serve immediately.

Notes

Keep an eye on the oven during baking to avoid burning chips. Drain excess fat from beef to prevent soggy nachos. Layer toppings immediately after baking to keep them fresh and vibrant. For vegetarian or dairy-free versions, swap beef for beans or plant-based crumbles and use vegan cheese and coconut yogurt.
