Flavorful Buffalo Party Bowl Recipe with Soft-Boiled Eggs

  • 1 lb boneless skinless chicken thighs or breasts, cut into bite-sized pieces
  • ½ cup buffalo sauce (Frank’s RedHot recommended)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 4 large eggs, room temperature
  • ½ cup mayonnaise
  • ¼ cup sour cream or Greek yogurt
  • 1 tbsp lemon juice, freshly squeezed
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh tarragon or basil, chopped
  • 1 small clove garlic, minced
  • Salt and pepper, to taste
  • 4 cups mixed greens (baby spinach, arugula, or Romaine)
  • 1 cup cooked quinoa or brown rice (optional)
  • ½ cup celery, chopped
  • ¼ cup crumbled blue cheese or feta (optional)
  • Chopped green onions or scallions, for garnish

Instructions

  1. Bring a medium saucepan of water to a gentle boil. Carefully add 4 large eggs using a slotted spoon. Boil for exactly 6 minutes for a perfect jammy yolk. Immediately transfer eggs to an ice bath for 5 minutes to stop cooking and make peeling easier. Carefully peel and set aside.
  2. While eggs are boiling, heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken pieces, season with salt, pepper, and 1 tsp garlic powder. Cook for about 6-8 minutes, turning occasionally, until chicken is golden and cooked through (internal temperature 165°F).
  3. Remove skillet from heat. Pour ½ cup buffalo sauce over the chicken and toss well to coat every bite. Set aside but keep warm.
  4. In a mixing bowl, combine ½ cup mayonnaise, ¼ cup sour cream or Greek yogurt, 1 tbsp lemon juice, chopped parsley, chives, tarragon or basil, minced garlic, salt, and pepper. Whisk until smooth and creamy. Taste and adjust seasoning if needed.
  5. In large serving bowls, layer 1 cup mixed greens and ¼ cup cooked quinoa or brown rice if using. Add chopped celery for crunch. Place buffalo chicken on top, then gently slice the soft-boiled eggs in halves or quarters and arrange over the bowl. Drizzle green goddess dressing generously over everything.
  6. Sprinkle crumbled blue cheese or feta and chopped green onions on top. Serve immediately.

Notes

Start with room temperature eggs to avoid cracking. Use a timer for perfect soft-boiled eggs. Do not overcrowd the pan when cooking chicken to ensure a golden crust. Toss chicken in buffalo sauce off the heat to keep sauce silky. Keep dressing chilled until serving. For extra crisp celery, soak in ice water before chopping. Adjust buffalo sauce heat by mixing with butter or honey.
