  • 1 tsp salt
  • 1 tsp turmeric powder

  • 1 tbsp coriander seeds
  • 1 tsp black peppercorns
  • 45 dried red chilies (adjust to heat preference)
  • 45 garlic cloves, minced
  • 1-inch piece ginger, grated
  • 1 tsp mustard seeds
  • 1 tsp fenugreek seeds (optional)
  • 1 tsp paprika
  • 1 tbsp tomato paste
  • 2 tbsp brown sugar or jaggery
  • 2 tbsp white vinegar (for sauce)
  • 1/2 cup water or chicken broth
  • 1 large onion, finely chopped
  • 2 medium potatoes, peeled and cubed
  • Fresh cilantro for garnish (optional)

Instructions

  1. Marinate the chicken pieces with 2 tbsp white vinegar, 1 tsp salt, and 1 tsp turmeric powder. Let sit for at least 30 minutes or up to 2 hours in the fridge.
  2. Toast cumin seeds, coriander seeds, black peppercorns, mustard seeds, fenugreek seeds, and dried red chilies in a dry skillet over medium heat for 2-3 minutes until fragrant. Cool and grind to a fine powder.
  3. Heat 2 tbsp oil in the skillet over medium heat. Sauté finely chopped onions until golden brown, about 10 minutes.
  4. Add minced garlic and grated ginger; cook for 1-2 minutes until fragrant.
  5. Add the ground spice mix, paprika, and tomato paste to the onions. Stir and cook for 2 minutes to deepen flavors.
  6. Stir in brown sugar and 2 tbsp white vinegar, then add 1/2 cup water or chicken broth. Mix well, scraping the pan bottom.
  7. Add marinated chicken and cubed potatoes. Stir to coat with sauce. Bring to a gentle simmer, cover, and cook on low heat for 30-35 minutes, stirring occasionally.
  8. Taste and adjust seasoning. Add more vinegar for tang or chili powder/fresh chilies for heat. Simmer uncovered for 5 minutes if sauce needs thickening.
  9. Garnish with chopped fresh cilantro before serving. Serve hot with steamed basmati rice or warm naan.

Notes

Use fresh whole spices toasted and ground for best flavor. Marinate chicken for at least 30 minutes for tenderness. Adjust dried chilies to control heat. Mustard oil adds authentic flavor but vegetable oil works fine. Leftovers taste better the next day. Sauce can be loosened with water or broth if too thick. Spice paste can be prepared ahead and stored in fridge up to 3 days.
