Flavorful Chili Cheese Burrito Recipe Perfect for Weeknight Dinners

  • 1 lb ground beef or turkey
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup canned diced tomatoes
  • 1 cup tomato sauce
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 6 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • Optional toppings: diced green onions, sliced jalapeños, chopped cilantro

Instructions

  1. In a large skillet, heat a drizzle of oil over medium heat. Add the ground beef (or turkey) and cook until browned, breaking it up with a wooden spoon as it cooks—about 5-7 minutes.
  2. Add the diced onion and minced garlic to the skillet. Cook for another 3 minutes, stirring frequently, until the onion is translucent and fragrant.
  3. Stir in the canned tomatoes, tomato sauce, chili powder, cumin, paprika, salt, and pepper. Reduce the heat to low and let the mixture simmer for 10 minutes. (Tip: If you prefer a thicker chili, let it simmer a bit longer.)
  4. While the chili is simmering, warm your tortillas. You can do this by placing them in a dry skillet over medium heat for about 30 seconds per side or microwaving them wrapped in a damp paper towel.
  5. To assemble the burritos, lay a tortilla flat and spread a spoonful of sour cream down the center. Add a generous scoop of chili, followed by shredded cheese and any desired toppings.
  6. Fold in the sides of the tortilla, then roll it up tightly from the bottom. Repeat with the remaining tortillas and filling.
  7. If desired, place the burritos seam-side down in a skillet over medium heat for 1-2 minutes to toast the outside. Serve immediately!
