Instructions

  1. Prepare the Chicken Filling (10 minutes): In a large bowl, combine shredded chicken, finely chopped chipotle peppers, mayonnaise, lime juice, garlic powder, salt, and pepper. Mix well until evenly coated. Adjust seasoning to taste. Optionally mash chicken slightly for creamier texture.
  2. Prep the Avocado (2-3 minutes): Slice or mash the ripe avocado. If mashed, season lightly with salt and a squeeze of lime. Set aside.
  3. Assemble the Sandwiches (5 minutes): Butter one side of each sourdough slice generously. On the unbuttered side, spread chipotle chicken filling. Top each with a slice of pepper jack cheese, then add avocado evenly. Add cilantro or optional toppings if desired. Close with second slice of bread, buttered side facing out.
  4. Toast the Sandwiches (5-7 minutes): Heat a nonstick skillet over medium heat. Place sandwiches in pan and cook about 3-4 minutes per side, pressing gently with spatula for even contact. Watch for golden brown bread and melted cheese. If bread browns too fast, lower heat and cover pan briefly.
