Ingredients

Scale
  • 1 pound (450 g) 80/20 ground beef
  • 1 tablespoon olive oil
  • 1 small yellow or white onion, finely diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1 teaspoon brown sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 small corn or flour tortillas, warmed
  • Optional toppings: shredded lettuce, diced tomatoes, chopped cilantro, sliced avocado or guacamole, fresh lime wedges, sour cream or Mexican crema, shredded cheese (cheddar or Monterey Jack)

Instructions

  1. Prepare the seasoning mix by combining chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, red pepper flakes, brown sugar, salt, and black pepper in a small bowl. Stir well to blend all spices evenly. Set aside.
  2. Heat olive oil in a large skillet over medium heat. Add diced onions and cook for 3–4 minutes until softened and translucent.
  3. Add minced garlic and cook for another 30 seconds until fragrant, being careful not to burn it.
  4. Increase heat to medium-high and add ground beef. Break it into small crumbles with a spatula or wooden spoon. Cook for 5–7 minutes until browned with no pink remaining. Drain excess fat if desired.
  5. Sprinkle the prepared seasoning mix evenly over the beef. Stir to coat thoroughly. Add 1/4 cup (60 ml) water and reduce heat to medium-low. Simmer for 5 minutes, stirring occasionally, until fragrant and slightly thickened.
  6. Warm tortillas in a dry skillet for about 30 seconds per side or wrap in foil and heat in a 350°F (175°C) oven for 5–7 minutes.
  7. Assemble tacos by spooning seasoned beef onto warm tortillas and adding desired toppings. Squeeze fresh lime juice over the top before serving.

Notes

Do not overcrowd the pan when browning beef to ensure proper searing. Prepare toppings before cooking for smooth assembly. If beef seems dry after simmering, add a splash more water or lime juice. Seasoning can be made in bulk and stored for up to 3 months. For juicier tacos, leave a little fat when draining beef. Adjust crushed red pepper flakes to control heat level.
