  • 1 cup (240ml) coconut milk (full fat for creaminess)

  • 2 cups (250g) all-purpose flour (or whole wheat flour)
  • ½ teaspoon salt
  • ¾ cup (180ml) warm water
  • 2 tablespoons vegetable oil or melted butter
  • Extra flour for dusting

Instructions

  1. Prepare the Roti Dough: In a large mixing bowl, combine 2 cups all-purpose flour and ½ teaspoon salt. Slowly add ¾ cup warm water and 2 tablespoons oil or melted butter. Mix until dough starts to come together.
  2. Knead the Dough: Transfer dough to a floured surface and knead for 8-10 minutes until smooth and elastic. Cover with damp cloth or plastic wrap and let rest for 30 minutes.
  3. Cook the Spiced Golden Chicken: Heat 2 tablespoons oil in a skillet over medium heat. Sauté chopped onion until translucent, about 4 minutes. Add garlic and ginger; cook 1 minute until fragrant.
  4. Add curry powder, turmeric, cumin, and chili powder. Toast spices for 30 seconds, stirring constantly.
  5. Increase heat to medium-high, add chicken pieces, and cook 5-7 minutes until chicken starts to brown.
  6. Pour in 1 cup coconut milk, stir well, reduce heat to low, and simmer gently for 15-20 minutes until chicken is tender and sauce thickens. Season with salt and pepper.
  7. Roll Out the Roti: Divide rested dough into 8 equal portions. Roll each into a thin circle about 7-8 inches in diameter.
  8. Cook the Roti: Heat a dry non-stick skillet over medium-high heat. Cook each roti 1-2 minutes per side until golden brown spots appear. Stack cooked rotis under a clean towel to keep warm.
