  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 4 large eggs
  • Optional garnishes: fresh cilantro leaves, sesame seeds, thinly sliced chili or sriracha drizzle

Instructions

  1. Prepare the sauce by whisking together soy sauce, toasted sesame oil, rice vinegar, honey, and red pepper flakes in a small bowl. Set aside.
  2. Soft-boil the eggs: bring water to a boil, gently lower eggs in, cook for exactly 7 minutes, then transfer to ice water. Peel and set aside.
  3. Heat a large skillet or wok over medium-high heat. Add ground meat and cook until browned and cooked through, about 6-8 minutes. Drain excess fat if needed.
  4. Add minced garlic and grated ginger to the cooked meat. Stir-fry for 1-2 minutes until fragrant.
  5. Add shredded cabbage and carrots to the skillet. Toss and cook until cabbage softens but remains slightly crunchy, about 4-5 minutes.
  6. Pour the prepared sauce over the meat and vegetables. Stir well and simmer for 2-3 minutes to meld flavors. Adjust seasoning if needed.
  7. Spoon the mixture into serving bowls. Slice soft-boiled eggs in half and place on top. Garnish with green onions, cilantro, and sesame seeds.

Notes

Use a kitchen timer and ice bath for perfect soft-boiled eggs. Avoid overcooking cabbage to keep it crunchy. Drain excess fat from meat to prevent greasiness. Adjust soy sauce and vinegar to taste.
