Ingredients

Scale
  • 1 pound ground beef (80/20 preferred)
  • 3 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1/2 cup honey BBQ sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 8 small flour or corn tortillas
  • Optional toppings: finely chopped red onion, fresh cilantro leaves, shredded sharp cheddar or Monterey Jack cheese, sliced jalapeños, sour cream or Greek yogurt

Instructions

  1. Prepare the garlic butter: In a small bowl, mix the softened butter with minced garlic until well combined. Set aside.
  2. Cook the beef: Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 7-8 minutes. Drain excess fat if needed.
  3. Add spices: Sprinkle smoked paprika, chili powder, cumin, black pepper, and salt over the beef. Stir well to coat evenly and cook for another 1-2 minutes to toast the spices.
  4. Incorporate garlic butter: Lower heat to medium. Push the beef to one side of the skillet and add the garlic butter mixture to the empty side. Let it melt gently, swirling to combine with the beef as you stir. Cook for about 2-3 minutes without burning the butter.
  5. Add honey BBQ sauce: Pour the honey BBQ sauce over the beef and stir until glossy and coated. Simmer for 2-3 minutes to thicken slightly.
  6. Warm tortillas: Wipe the skillet clean or use a second pan. Add a small dab of garlic butter and warm tortillas one at a time for 20-30 seconds per side until soft and slightly golden. Keep warm wrapped in a clean towel.
  7. Assemble tacos: Spoon the garlic butter honey BBQ beef onto each tortilla. Add desired toppings such as red onion, cilantro, cheese, jalapeños, and sour cream.
  8. Serve immediately while warm and juicy.

Notes

Use softened butter for better incorporation with garlic. Mince garlic finely to avoid bitter burnt chunks. Do not overcook beef to keep it juicy. Toast spices briefly to release oils and deepen flavor. Warm tortillas in garlic butter for extra flavor. If garlic butter browns too fast, lower heat and stir frequently. Drain excess fat to avoid oily sauce. Cast iron skillet helps develop crust but nonstick works fine if careful.
