  • 6 slices thick-cut bacon
  • 4 slices sharp cheddar cheese
  • 1 large sweet yellow onion, thinly sliced into rings
  • 1 cup (125g) all-purpose flour
  • 1 cup (240ml) buttermilk
  • ½ cup (120ml) BBQ sauce
  • Salt and pepper to taste
  • Vegetable oil for frying (canola or peanut oil preferred)
  • 4 burger buns (brioche or potato), toasted
  • Optional toppings: lettuce, tomato slices, pickles, jalapeños

Instructions

  1. Peel and slice the onion into thin rings about ¼ inch thick. Separate the rings and soak them in buttermilk for 10-15 minutes.
  2. Combine all-purpose flour with a pinch of salt and pepper in a shallow bowl. Optionally add cornstarch or smoked paprika for extra crunch and smoky flavor.
  3. Dredge the soaked onion rings in the flour mixture, coating fully and shaking off excess flour.
  4. Heat oil to 350°F (175°C). Fry onion rings in batches for 2-3 minutes each until golden brown and crispy. Drain on a cooling rack lined with paper towels.
  5. Form ground beef into 4 even patties (about ¼ lb or 113g each). Season with salt and pepper on both sides without overpacking.
  6. Grill bacon slices over medium heat until crispy. Drain on paper towels.
  7. Grill burger patties over medium-high heat for 4-5 minutes per side. In the last minute, top each patty with a slice of cheddar cheese and close the grill lid to melt.
  8. Toast burger buns cut-side down on the grill for 1-2 minutes until lightly browned.
  9. Assemble burgers by spreading BBQ sauce on the bottom bun, adding the cheesy patty, crispy bacon, a handful of onion rings, optional toppings, and the top bun.
  10. Serve immediately while hot.

Notes

For gluten-free onion rings, substitute all-purpose flour with almond flour or gluten-free blend. For dairy-free, replace buttermilk with dairy-free milk plus apple cider vinegar. Double dip onion rings in buttermilk and flour for extra crispiness. Maintain oil temperature at 350°F to avoid greasy onion rings. Rest burgers a few minutes before assembling to redistribute juices.
